Healthy Organic Vegan Granola Bars

Make your own granola bars at home! They’re really easy to make, you just find the things you like most in granola bars, throw it all into the food processor and then squeeze them into shape!

Ingredients

  • 1 cup quick oats

  • 1/2 cup walnuts chopped

  • 1/3 cup sunflower seeds

  • 1/4 cup currants

  • 6 dried apricots finely chopped

  • 2 tbsp almond butter

  • 2 tbsp maple syrup

  • 2 tbsp apple cider vinegar

  • 1 tsp maca powder

  • 1 tsp vanilla powder

  • 1/2 tsp cinnamon powder

Method

  1. Combine all the dry ingredients in a mixing bowl and mix well. Add all the other ingredients and mix well with your hands until well combined. 

  2. Line a 9" x 5" tin with wax paper and spoon the mixture into the tin and using a spoon firmly push the mass down so the bars won't loose shape later when you cut them. 

  3. Freeze it for about 30 minutes then cut into 8 equal sized bars before eating. 

  4. Store in the refrigerator.
