quinoa pizza dough

One of my favorites!
You can top the pizza with any of your favorite toppings.
Whenever I have some leftover dough I use it to make garlic sticks or savory crackers.


Ingredients
(makes a 9" x 12" pizza)

1/2 cup + 1 tbsp. buckwheat flour
1/2 cup warm water
1/4 cup rye flour + 1 tbsp if needed
1/4 cup quinoa
3 tbsp white or whole wheat flour
1 tbsp sunflower seeds
1 tbsp wheat germ
1 tbsp fresh chopped herbs (parsley, thyme,...)
1/2 - 1 tsp chili flakes
1 tsp dry active yeast
dash of salt
optional 1 tbsp flax seeds or any other seeds such as pumpkin seeds


Method

1. Combine all the dry ingredients in a large mixing bowl. Gradually add the water and form a dough. Kneed for about 5 minutes. If the dough is too sticky, add an additional tbsp of rye flour. 

2. Form the dough into a nice ball and cover the bowl with a moist dish cloth and let it proof for about 30 minutes to 1 hour in a warm place. 

3. Using your fingers spread the dough out evenly onto a baking or pizza tray. The dough should be about 1/8 " thick. You can also roll out the dough and then put it on the baking tray. 

4. Top with any of your favorite toppings. I like putting a combination of onion, tomatoes, corn, mushrooms, spinach and any other vegetables I can find. I put some fresh zucchini flowers on mine. They're really yummy!
Adding some nutritional yeast gives it extra flavor. 

5. Bake for about 30 minutes at 350F.
