baked chard falafel wraps

Just like traditional falafels, except these are full of extra goodness and wrapped in greens.

Ingredients

  • 1/2 cup chickpea flour

  • 1/4 cup quick oats

  • 1/4 cup corn flour

  • 1/3 cup quinoa flakes

  • 2 tbsp. dried tomatoes (finely chopped)

  • 1 onion finely chopped

  • 1-2 cloves of garlic minced

  • 1/2 tsp. coriander powder

  • 1 tsp. cumin powder

  • 1/2 tsp. ground black pepper

  • 1/2 tsp. paprika powder

  • 1 tsp. sea salt

  • 1 1/4- 1 1/2 cups hot water

  • large bunch of fresh chard

  • optional 1 inch piece of fresh turmeric grated and 1/4 tsp. cayenne powder

Method

  1. Gently rinse the chard, then cut off the hard stems using a knife or scissors.

  2. Combine all the ingredients except for the water and chard in a large mixing bowl. Add the hot water and mix well. Let the mixture soak for 5 minutes.

  3. Wrap 1-2 tbsp. of the falafel dough in the chard leaves. The dough makes 6-7 wraps.

  4. Place the wraps in an oven safe dish and cover with a lid or foil.

  5. Bake for 25 minutes with the lid, then remove lid and continue baking for another 5 minutes.

Enjoy plain, with salad or plant based yoghurt!
