Schwarzwurzelsalat - black salsify salad

easy to make, 6 ingredients, dairy-free

  • 4 - 5 salsify roots
  • 4 tbsp. dairy free yoghurt such as soy
  • juice of 1/2 lemon
  • 1 tsp. thyme
  • salt and pepper
  • 1 tsp. apple cider vinegar 

1. Prepare a pot with water, some salt and 1 tsp. apple cider vinegar to boil the salsify. 

2. Peel or scrape off the black peel of the salsify in a bowl with water and cut it into 1 -  2 inch pieces and quickly put the pieces in the pot, before it changes color. 

3. Boil the salsify for about 30 - 45 min.

4. Strain it and let it cool.

5. Place the salsify in a bowl and add all the other ingredients. Mix well.

Enjoy by itself, with a slice of bread or in a mixed salad.
